The European anchovy (Engraulis encrasicolus) is recognised worldwide as having the highest quality, without a doubt. Agromar only uses the Cantabrian coast anchovy caught in the spring, at which time it is at its optimum flavour. This format includes only large anchovies, selected due to their greater scarcity and value, as well as for their better presentation. Their preparation is entirely traditional and the size of the fillets corresponds to the double zero category.
