When the spelt grains are ground on a stone mill, they come into contact with the natural substances and minerals from which they have been feeding to grow. After grinding, the flour is sifted with the finest sieve, thus removing all Bran. It has a characteristic slightly yellowish color. White spelt flour is suitable for all kinds of dough temptations.
